Orange, Almond & Poppyseed Cake
My birth certificate may say 22 but I'm pretty sure I'm at least 72. Baking and sewing are my outlets - all while drinking copious amounts of tea.
This recipe is my go to whenever I need a steady source for my snack breaks and have been designated supplying the dessert (it's next level served warm with ice cream!!). I like to think it's healthy - it has oranges in it so surely that means something, and it damn sure tastes good. So moist and flavourful.
Follow the steps below to make one and find out for yourself.
The Essentials
- 2 Oranges
- 3 eggs
- 1 Cup Brown Sugar
- 2 Cups Almond Meal
- 1 Tsp Cinnamon
- 4 Tbs Butter or Coconut oil
- 1/4 Cup Poppyseeds
- 1 Tsp Baking Powder

Bring a pot of water to boil. Meanwhile rinse the oranges and cut the top and bottom slithers off. Then place unpeeled into the boiling water and leave for an hour - or until a knife can prick through the skin with little effort.
Once done, allow to cool.

Preheat oven to 170 degrees celsius (fan force).
Meanwhile put the now cool oranges into a food processor (including peel) and blend until puree.

In a bowl begin to mix dry ingredients - almond meal, sugar, baking powder, cinnamon and poppyseeds.
Then mix in wet ingredients - butter, eggs and orange puree.
Pour mix into cake pan and cook for 50-60mins or until golden brown.
